I love Valentine’s Day. I love it now, because I have a husband and two boys that I can show my love to. When I was young and single I didn’t love it so much! I show my love to my family on a daily base with cooking. I love to cook the foods they love. It brings me and them joy.
My Valentine’s dinner is usually simple, so I can spend the time with them instead of in the kitchen. Something about Ravioli with Crushed Tomato Sauce says LOVE… It is probably that it is simple and so delicious. You can set the table like you are at a fancy restaurant. Add a soft tablecloth, fresh flowers, wine and sparkling cider for the kids.

Ingredients:
- 2 pounds of Ravioli (I recommend Pastosa or Mimi’s if you could find them)
- 2-28 oz. cans of crushed tomatoes
- 8 cloves of garlic, sliced
- crushed red pepper flakes
- salt and pepper
- Extra virgin olive oil
- Grated Pecorino Romano Cheese
Directions:
- In a large saute pan heat about 2 tablespoons of olive oil over medium heat.
- Add a pinch of crushed red pepper flakes and garlic.
- Once garlic is golden (1-2 minutes), add both cans of crushed tomatoes. (When I pour the tomatoes in the pan there is usually some leftover tomatoes in the can. Fill both cans ⅓ of the way with water and swish it around to get all the leftover tomatoes and add that to the pan as well)
- Lower heat to low so it doesn’t splatter.
- Add 2 pinches of salt and fresh ground black pepper.
- Stir and let simmer for 10-15 minutes.
- Meanwhile bring a pot of salted water to a boil. Cook ravioli according to directions on box.
- Drain and serve in a flat dish. Top with sauce and grated pecorino romano cheese.
